Cauliflower Kale Cod Bowl

Need a reason to add cauliflower into your diet? It's packed with cancer-fighting glucosinolates. It is also high in fiber and can aid in weight loss. It serves as a low-carb alternative for grains and legumes.
Wild cod is an excellent source of omega 3 fatty acids which helps promote cardiovascular health. Cod is a great source of vitamins B12 and B6 which are known to help lower the risk of strokes and heart attacks.
1 large bunch of lacinato kale, stems removed, chopped
1 small leek, cleaned and cut into thin rings
1 pound of wild cod pieces
1-1/2 tbs coconut oil
1/2 fresh lemon
Salt and pepper to taste
Place 1/2 tbs of coconut oil in a large skillet, medium-high heat. Add the leeks and cook until translucent.
Add kale and season with salt and pepper. Cover for 5-10 minutes, until the kale is nearly cooked through.
Add the cooked cauliflower rice to the kale and mix.
While the vegetables cook, add one tablespoon of coconut oil to another large pan on medium-high heat.
Pat the cod dry and season with salt and pepper. Place cod in warm pan. Cook for about 3 minutes and then flip. When cooked through, squeeze fresh lemon juice on top and remove from heat.
Place the cauliflower kale mixture in a bowl and top with sauteed cod.
