Food for thought:

  • Bone broth is very rich in calcium and magnesium. The tissues and bones brewed in the broth contain collagen, when cooked turns into gelatin, which provides amino acids, the building blocks of protein.

  • Bell peppers, a member of the nightshade family, are low in calories and rich with Vitamin C, Vitamin B6 (known for its importance in red blood cell formation), and folate which is important for pregnant women.

Ingredients

  • 1 tbs olive oil

  • 1 small onion (finely chopped)

  • 1 medium green pepper (finely chopped)

  • 1 clove garlic (finely minced)

  • 1 lb ground beef (grass fed)

  • 3 heaped tbs tomato paste

  • 1/2 cup diced tomatoes

  • 8 oz beef bone broth

  • 1-1/2 tsp chili powder

  • 1 tsp cumin

  • 1-1/2 tsp salt

  • 1/2 tsp pepper

Instructions

  1. In a large stock pot or dutch oven, heat olive oil under medium heat. Add onions and bell peppers. Sautée for 1-2 minutes. Stir in garlic, salt, pepper, and spices.

  2. Add ground beef and cook until browned. Stir in tomato paste, tomatoes, and broth.

  3. Bring to a boil, then reduce heat to low. Cook for 20-25 minutes, stirring occasionally.

  4. Top with cheese, sour cream, and avocado if desired.

Grass-fed beef is a healthier option vs grain-fed beef.
